Makhana Kheer, or Foxnut Pudding, is a Creamy, milk-based pudding that combines golden roasted fox nuts with lots of whole milk. Mawa and many dry fruits give it a decadent taste and rich flavor. It is considered Vrat food by a large no of people.

What is Makhana?
Makhana /Phool Makhana or Fox nuts are popularly known as lotus seeds. They are widespread in Bihar, so growing up, we had many delights of Makhana. I remember we usually had so much makhana at home that my Mom stored them in big steal containers. So when I bought them in Gms for the first time, I felt weird.
Here in the US, they are readily available in Indian stores. They are a powerhouse of energy, and so many vitamins and minerals are in them. They are delicious in any form and healthy too.

Health Benefits of Makhana,
Makhana or Foxnuts are excellent for potassium, magnesium, iron, phosphorus, and zinc. They are super food hence great for snacking. Sweet or savory, in any form, they are just delicious.
Ingredients Needed to make Makhana Kheer?
Fox Nuts/Makhana- Easily Available in almost all the stores. If you are in the USA, try any Indian grocery store or Amazon for this.
Mawa Milk Powder- Easily available in Indian grocery stores in the USA. You can also use grated khoa/Mawa for this recipe.
Whole Milk- I always use A2 Milk for my kitchen. They are free of hormones and have better taste.
Sugar- Any granular sugar is good though I like to use Costco's organic cane sugar.
Ghee- To roast the fox nuts. It gives a lovely aroma and great texture to the Makhana.
Dry Fruits- I have used slivered almonds, pistachios, and raisins for this recipe.
Green Cardamom for flavor and dry rose petals for garnish.
Saffron-Any good quality saffron will work . Again amazon or Indian grocery stores.

Makhana Kheer /Foxnut Pudding
Ingredients
- 2 Cup Makhana/Foxnut
- 1 Litre Milk
- ½ Cup Sugar(you can increase or decrease the quantity)
- 2 Tbsp Ghee
- ½ Cup Dry Fruits(Mixed) 1 tbsp reserve for garnish.
- 1 Green Cardamom(crushed)
- ½ Cup Mawa Powder
- 1 Tbsp Rose Petals for garnish
- 8-10 Strand Saffron(Soak in one tbsp of warm milk )
Instructions
- Take a heavy bottom pan and heat the ghee in it.
- Roast the makhana /fox nuts till they are crispy and golden .Do not let them get brown.
- Remove them on a plate.Dry roast all the dry fruits in the same pan .
- Now add milk and let it come to a boil .Reduce the flame and add mawa powder to it .
- Stir it in between to avoid lumps and sticking to the bottom.
- Add makhana and mix with the milk mixture .Add saffron soaked in one tbsp of milk now.
- Add crushed cardamom to the pan.
- Mix all the dry fruits and stir again.When you think it comes to almost a thick consistency ,which will take around 20 to 30 minutes.Add sugar and stir.
- Let it cook for a few minutes and switch off the flame.
- Take out in a serving bowl.
- Garnish with rose petals and dry fruits(leftover).
- Serve hot or cold.
- I like mine chilled for at least four hours in the fridge.
- Flavors get develop by keeping them in the fridge overnight as well.
- Enjoy.
