If you have not ever tried udon noodles, you are missing something. They are chewy wheat noodles. These noodles are thick, vegan, super slurpy, and delicious.
They are initially from Japan and traditionally cooked meat. But since we are cooking them, they can be made according to our taste and preference.Hence vegan
How to cook black pepper veggie udon noodles?
First, cook the noodles-- Fresh udon noodles are the best; however, I buy thick udon from Trader Joe's, which can be cooked by dipping it in hot water. They work perfectly.
If fresh or frozen udon is unavailable in your stores, you can always use dry udon noodles; however, they won't be thick.
Prepare your veggies for stir fry- Use veggies of your choice. I have used all kinds of colorful veggies and aromatics for my noodles. Use generously for a lot of flavor and texture.
Stir fry sauce mix- This sauce mix is simple to make. We use dark soy sauce, crushed black pepper, light soy sauce, brown sugar, red chili sauce or gochujang, sesame oil, and rice vinegar.
You can always mix and match the sauces according to your liking, but primarily, these noodles are flavored mostly with crushed black pepper, and that's why we call them black pepper veggie udon noodles.

- Cook Noodles according to the package instruction.
- Slice and chop all the vegetables and aromatics.
- Mix all the sauces and give it a taste ,you can always add something original for your taste buds.
- Heat a pan or wok.Add sesame oil.Cook all the aromatics and veggies for 1 minute till they have texture and are charred .
- Add noodles and stir- fry everything together.
- Pour sauce mix over everything and give it a good mix.
- Garnish with scallion and enjoy.
