Aloo Tikka Masala is cooked just like paneer tikka masala or chicken tikka masala.Only the hero of the dish is different this time. How to make Aloo Tikka Masala?
The first step is to boil baby potatoes until they are fork-tender yet firm. Peel them and marinate them with a thick yogurt marinade. Leave them on the counter for 15 minutes and cook in an onion, tomato, and cashew-based gravy until the oil is separated.
How to marinate?
You can remove all the water from curd or yogurt by hanging it in cheesecloth for 2-3 hours or using thick Greek yogurt. Add ginger-garlic paste, turmeric powder, red chili powder, chat masala, coriander powder, oil, salt, and fenugreek leaves (optional).
Mix properly and leave covered for 2 -3 hours. Use them in the gravy and cook aloo tikka masala as described.

Baby Potatoes—Boil them until al dente.Boiling them in an open pot filled with water is better than using a pressure cooker because you can control the firmness of the potatoes.
Spices—We use many whole and powdered dry spices for fragrance and flavor. They always infuse a delectable taste in any Indian recipe. However, you can always tone down the spice level or skip them.
Yogurt—The thicker the yogurt or curd, the better the marinade will taste. If your curd is watery, strain it through cheesecloth. I love to use Greek yogurt for it.
Aromatics- Ginger, garlic, and onion are staples in any Indian recipe.
Tomato and cashew are also used to make a luscious creamy gravy.

- Boil and peel the potatoes. Marinate them with all the ingredients listed above.
- Prepare the tomato ,foxnut and dry red chili paste by boiling and grinding them into a paste.
- The Third step is to cook marinated potatoes with peppers and onion petals in a pan without any oil.When oil is released and potatoes look little cooked ,remove them in a plate.
- Take a fresh Pan.Add oil to it .Heat and add cumin seeds till it splatters.
- Add chopped onion and cook till translucent. Now add tomato, dry red chili ,foxnut paste ,and other spices.
- Cook till oil is separated and add marinated and cooked potato ,peppers and onion.
- Add water and cook everything for around 7-8 minutes on low flame.
- Garnish with cream and chopped fresh cilantro.
- Enjoy.
