Couscous combined with grilled summer vegetables and a delicious dressing of Dijon mustard, lime juice, Olive oil, red pepper flakes, minced garlic, salt, and crushed pepper. This salad is a perfect meal on hot summer days. It can be made a day ahead and works fantastically for a lunchbox menu. Ideal for seasonal potlucks and goes well with summer barbecue parties.

Ingredients needed to make this salad,
Couscous - Cook couscous according to the package instructions. I have added some high-quality extra-virgin olive oil, red pepper flakes, salt, and pepper.
Mixed vegetables - I have used eggplant, pumpkin, cherry tomatoes, onion, scallions, red peppers, and green peppers. You can always add zucchini, broccoli, or any other veggies of your choice.
Additionally, I am using capers and olives to add flavor and texture.
Ingredients needed for dressing
Olive oil, Lime juice, Dijon Mustard, Salt, red pepper flakes, minced garlic, and crushed black pepper are used in making. This is a delicious dressing for salad.

Can we make this ahead?
We can prepare this well in advance. Keep the dressing and salad separate till the serving time. Pour the dressing over the salad just before serving and enjoy.

- Cook Couscous according to the package instruction.
- Mix all the veggies with salt ,red pepper flakes,and olive oil.Air fry them at 375 f for 6-7 minutes.They will be grilled and cooked.
- Remove veggies from the air fryer.Mix couscous ,grilled veggies whisk all the ingredient written under dressing and pour it over every thing.
- Mix and enjoy.
