Beans kara poriyal /Easy Beans Poriyal is a South Indian green bean fry made by cooking green beans, coconut, Curry leaves, and Peanuts.
It's a simple stir-fry dish that takes under twenty minutes to prepare. It's healthy, perfect for weight loss, and ideal for summer.

Ingredients needed for Beans Kara poriyal?
Green Beans- I prefer fresh beans because they bite slightly; however, frozen beans will also work here.
The spice mix will provide the best taste for this stir fry.
Coconut - Fresh, frozen, or dried; any coconut will work in this recipe.
Roasted Peanuts- Roasted Peanuts add a lovely nutty flavor.
Cumin Seeds- The Aromatic flavor of cumin seeds is just mind-blowing.
Dried Red Chili—Add red pepper flakes if you don't have dried red chili. You do not need to add anything if you are sensitive to spicy food. Skip it.
For tempering,
Oil, Mustard Seeds, Urad dal, Curry Leaves. Onion is an additional ingredient for curry.
Salt, turmeric, and a little bit of water. We are using just one or two tablespoons of water for this recipe, but that can be increased if needed.
The idea here is to make the stir fry a bit moist, not very dry; however, if beans have water in them, using water other than that is unnecessary.

How to make Beans Kara Poriyal?
- The first step is to clean and wash fresh green beans. If you are using frozen ones, skip this step. Then, chop them into small, bite-sized pieces.
- The second step is to prepare the dry spice mix. Grind coconut, peanuts, and dry red chili in a food processor.
- Heat oil in a pan and temper with all the tempering ingredients. Add bean spice powder and salt and cook.
- Add 1-2 tbsp water and cook covered on low /medium flame if the beans look dry.
- Remove the lid and add the dry spice powder we prepared earlier. Mix and cook nicely.
- It will take another one to two minutes. Remove to a bowl and enjoy.
Serving suggestion,
Bean kara poriyal tastes delicious with rice dal or rice rasam. This home-style curry is also enjoyable when served with simple meals.
It tastes excellent with roti, poori, or paratha. If you are avoiding carbs, you can taste it just as you cooked it. It also serves as a great warm salad dish.

Can we freeze it?
Yes, for 2-3 days, we can store it in a freezer-safe container or the fridge for a short time. However, since we are using coconut, which has a very short shelf life, we cannot store it for more then 2-3 days. The easy way is to do the prep work in advance and cook it fresh every time.

- Wash ,dry and chop the green beans.
- Prepare the spice mix.
- Take a heavy bottom pan or wok.Add oil and heat it.
- Add all the stuff for tempering like mustard seeds ,urad dal and curry leaves.Let them crackle .
- Add chopped onion and saute till it looks transparent.
- Add green beans ,turmeric powder and salt to this.
- Mix together and cook covered for 2 minutes or till beans are cooked till they have a bite left left.They look dry add one or two tbsp of water.
- Now add the grounded spice mix and saute the beans with it.Make sure beans are coated well the spices.
- The green Beans kara Poriyal is ready to eat.
