A simple take on a traditional korma recipe, this mushroom korma is delicious and easy to make. Sliced mushroom is marinated with fried brown onion (birista), yogurt, and a few spices, then cooked to perfection in a deep, heavy bottom pan. Mushroom korma is rich, hearty, and goes well with any bread or rice.

What is Korma?
Don't get confused with the word kurma, a south Indian curry. Korma is a north Indian Mughlai preparation of curry, which is rich and delicious. Veggies or meat is marinated with fried onion, spices, and yogurt and cooked for a long time on slow cooking. This method produces the most delicious and hearty curry without much effort. Immensely popular with north Indian Nawabs and rulers, this curry preparation stands out in itself.
Ingredients,
Mushroom- I prefer Baby Bella or button mushroom. They are mild and hence will absorb all the flavor.
Fried onion/ Birista.- You can use store-bought or make a barista by frying the sliced onion.
Ginger garlic paste is the best aromatic for flavor.
Spice powder- Red Chili powder, Coriander Powder, Turmeric powder, Kasoori Methi, Salt.
Yogurt and oil
Fresh Cilantro and green chilies
How to cook?
Wash and wipe clean the mushrooms. Slice them and keep them aside. Grind fried onion/birista and ginger garlic paste into a fine paste. Whisk yogurt and mix with birista paste and spices. Add mushrooms to the mixture and marinate them for 10 minutes.
Take a heavy bottom pan and add oil to it. Once hot, add the marinated mushroom mixture to the pan. Cook with lid covered for 10-12 minutes or till the oil is released. Stir once more and lower the flame. Cook it covered till the Mushroom is cooked and the curry is done. Manage the consistency; however, this curry is almost thick and not very watery in texture. Enjoy with naan.

Method
- Grind birista/fried onion and ginger garlic paste to make a nice paste.
- Slice the mushroom after cleaning and keep it aside.
- Mix yogurt ,fried onion paste and all the spices.
- Marinate mushrooms in this paste and keep them on the counter for 10-15 minutes.
- Take a heavy bottom pan .Add oil and heat the pan.
- Add marinated mushroom and stir it in the pan. Cook it covered on low flame for 10 minutes.
- If oil is released then add chopped cilantro. Stir it once more and cook covered for 7-8 more minutes on low flame.
- Switch off the flame and enjoy with roti or rice.
