What is so special about this Amritsari Palak Paneer Bhurji?
Let me tell you this: if you make this palak paneer bhurji once, you will be hooked to it and will make it again and again.
I have used two unique ingredients in this recipe: pav bhaji masala and chat masala. They make this bhurji so much better. I have added chopped baby spinach for added nutritional value to the dish.
Years back, when I was just married and was learning to cook, I was always confused about the spices and what to use or not to use in different veggies and dishes. So, I started experimenting with other spices in other dishes. Trust me, I loved the versatile nature of pav bhaji masala. I used that in many veggies, rice, and even khichadi. So here I am sharing a recipe that may not be authentic but is utterly delicious.

Ingredients,
Paneer - Grated store-bought or crumbled homemade paneer.
Oil and butter - Butter mixed with oil is best because butter doesn't burn or get brown.
Onion, ginger, garlic, green chilies, and tomato. Everything should be nicely chopped.
Roasted besan /gram flour, red chili powder, pav bhaji masala, chat masala, coriander powder, salt turmeric powder, heavy cream, yogurt.
How to cook?
First, prep all the ingredients. Take a heavy bottom pan. Add oil and butter combined. Add chopped onion, garlic, ginger, and green chilies. After sauteing for one or two minutes, they look translucent, so add chopped tomato. Mix well till the tomato softens.
Mix gram flour, all spices, heavy cream, and Yogurt. Add to the pan and saute. Saute till it releases oil. Now add grated paneer and mix it with everything. Let it simmer for one minute. Add lime juice and garnish with fresh cilantro(optional). Enjoy.

- Take a heavy bottom pan. Add oil and butter when it is so that the butter does not burn.
- Add chopped onion ,ginger ,garlic, and green chilies. Saute till the onion looks translucent.
- Add chopped tomato and salt at this time.
- Saute till the tomato looks soft and mushy.
- Add besan spice mix to the pan.Stir and cook till the oil seperates.That will take around 3-4 minutes.
- Now add grated paneer,and mix everything.
- Let it simmer for 2-3 minutes and add lime juice.
- Garnish with fresh cilantro if you want and enjoy.
