Makhana Kheer /Foxnut Pudding

Ingredients
  

  • 2 Cup Makhana/Foxnut
  • 1 Litre Milk
  • ½ Cup Sugar(you can increase or decrease the quantity)
  • 2 Tbsp Ghee
  • ½ Cup Dry Fruits(Mixed) 1 tbsp reserve for garnish.
  • 1 Green Cardamom(crushed)
  • ½ Cup Mawa Powder
  • 1 Tbsp Rose Petals for garnish
  • 8-10 Strand Saffron(Soak in one tbsp of warm milk )

Method
 

  1. Take a heavy bottom pan and heat the ghee in it.
  2. Roast the makhana /fox nuts till they are crispy and golden .Do not let them get brown.
  3. Remove them on a plate.Dry roast all the dry fruits in the same pan .
  4. Now add milk and let it come to a boil .Reduce the flame and add mawa powder to it .
  5. Stir it in between to avoid lumps and sticking to the bottom.
  6. Add makhana and mix with the milk mixture .Add saffron soaked in one tbsp of milk now.
  7. Add crushed cardamom to the pan.
  8. Mix all the dry fruits and stir again.When you think it comes to almost a thick consistency ,which will take around 20 to 30 minutes.Add sugar and stir.
  9. Let it cook for a few minutes and switch off the flame.
  10. Take out in a serving bowl.
  11. Garnish with rose petals and dry fruits(leftover).
  12. Serve hot or cold.
  13. I like mine chilled for at least four hours in the fridge.
  14. Flavors get develop by keeping them in the fridge overnight as well.
  15. Enjoy.
