Crisp, air-fried Sabudana vada is perfect for a guilt-free snack. It is also an excellent recipe for falahar on fasting days. Try this with a yogurt cilantro chutney, and you will love it— it's a Crowd-pleaser and great for lunch boxes.

What is Sabudana Vada?
Sabudana is sago pearls in English.Soaked sabudana pearls are mixed with boiled potatoes, crushed peanuts, fresh chopped cilantro, and chopped green chilies. After mixing, we make round, small patties and brush them with ghee or oil on both sides.
Air Fry them until they look crisp on both sides. You can crisp them according to your taste. Some people like them very crisp, some like them a little bit, so the choice is yours.
How do you soak and prepare Sabudana pearls perfectly?
Wash one cup of sabudana/Sago pearls under cold running water. Drain them properly. Soak them in one cup of water. Leave them for 3-4 hours.Your perfectly soaked khila khila sabudana pearls are ready to use.
The rule is to use the same amount of water with sabudana.Suppose we are using ½ cup of sabudana; then we should use ½ cup of water.And leave them for 3-4 hours. It works perfectly, always.
What ingredients are needed for this?
Potatoes—For this recipe, I used Yukon gold potatoes. These potatoes are smooth and give a lump-free mash.
Sabudana- use large pearls of sabudana .They are perfect for any recipe.
Crushed peanuts provide a lovely taste and texture to the sabudana vada.
Fresh Chopped Green Cilantro- This is for lovely freshness and taste.
Chopped Green Chili- For a spicy kick. If you do not want this spicy, skip it.
Oil/Ghee for brushing the Patties.
How to make it?
Take a bowl. Add grated potato, soaked sabudana, crushed peanuts, green chilies, and fresh cilantro. If you are making it for falahar, add sendha namak or rock salt; otherwise, use normal salt.

Mix everything properly to make a smooth dough.

Make small patties of the same size to air fry them.

Place them in a parchment-paper-lined air fryer for air frying.

Air fry them at 375 F until crispy on all sides. Remember to turn them around.

Remove them on a Plate and serve them with a green chutney. Enjoy.

Can we freeze them?
As always, they taste delicious. However, they can stay fresh for up to two weeks by being stored in freezer-safe boxes or zip-lock bags.
Air fry or bake them again in the oven to improve that crisp outside texture.
