This Mexican Chopped Salad is one of my favorite salads to create. It's super easy and ultimately delicious. I love how you can create a perfect-looking salad by assembling seasonal produce with a few pantry staples.

What Ingredients are used in the Salad?
Cherry Tomato/Grape Tomato/Chopped Tomato- I have used halved cherry tomatoes. However, you can use any other tomato. Cherry and grape tomatoes look pretty in this salad.
Avocado- Chopped ripe avocado gives a creamy touch to the salad. Do not use over-ripe ones.
Mango- Sweet, firm mangoes are perfect for this type of salad. They give the perfect hint of tanginess combined with sweetness, yet they are not overwhelming.
Sweet Corn- Boiled canned sweet corn is used in this salad; however, if you want fresh ones, you can certainly do that.
Black Beans- Canned black beans are perfect for this salad.
Colored Bell Peppers- Use any colored bell pepper for this recipe.
Fresh chopped cilantro and fresh chilies are the other ingredients.

What Type of Dressing is used in Mexican Chopped Salad?
I have used lime juice, olive oil, maple syrup, and red pepper flakes dressing. It's sweet, tangy, and perfectly delicious. It's not heavy and doesn't take many ingredients to prepare. Easy recipe for a light, fresh summer salad.

Mexican Chopped Salad
Ingredients
- ½ Cup Halved Cherry Tomato
- ½ Cup Chopped Avocado
- ½ Cup Chopped Ripe Mangoes
- ½ Cup Sweet Corn
- ½ Cup Black Beans
- ½ Cup Chopped Bell Pepper
- 1 Medium Chopped jalapeno or fresh chilies
- ½ Cup Chopped Fresh Cilantro
For Dressing,
- 3 Tbsp Extra virgin Olive oil
- 3 Tbsp Lime Juice
- 1 Tsp Maple Syrup
- 1 Tsp Red Pepper Flakes
- Salt to taste
- ½ Tsp Crushed Black Pepper
Instructions
- Mix the vegetables and fruits together.
- Whisk everything required to make the dressing.
- Pour dressing over the salad.
- Mix it well.
- Leave it in the fridge for 30 minutes to incorporate the flavors.
- Enjoy with your choice of main or just like that.
