A flavourful Asian dressing makes this salad finger licking. Fresh, clean and full of green goodness, this salad makes a perfect side to go with or a meal in itself. Vegan and super healthy.

Main Ingredients-
Green Beans- Fresh green beans are the soul of this salad. They are crunchy, fresh, sweet and very flavorful.
Using fresh green beans is really important and I don't think frozen beans can do justice to this recipe. Delicate green beans are a must for this great salad.
They are full of vitamins and antioxidants. Use them just after blanching. Cooking them too much can reduce their nutrients.
Using them in salad brings out the best in any green vegetable.
Edamame- I have used steamed shelled edamame in this recipe. They are easily available in almost all big grocery stores. Look for them in the frozen vegetable section.
They are powerhouses of protein and if you are vegan or vegetarian, you should include them in your diet. They are just delicious and I can eat them as a snack every day.
Other Ingredients-
Avocado- If you like avocado in your food, then you will love the inclusion of this superfood in your salad. They are creamy, nutty, and totally delicious.
Cucumber- Personally I prefer English cucumber for this salad recipe. They are the seedless ones with just the right amount of firm texture and sweet taste.
I love how eating cucumber every day in any form helps to detoxify your body. It's easily available and most of us like to eat them.
Onion- A little bit of red onion to give it a wonderful taste. You can use shallots as well.
For the dressing/marinade of this sauce, we are using dark soy sauce, red chilli sauce, red pepper flakes, lime juice, salt, crushed black pepper, garlic powder, and a little bit of chopped cilantro.
This marinade is super healthy, super flavorful and it makes any ordinary salad really awesome.

Green Beans & Edamame Salad
Ingredients
- 1 Cup Green Beans,chopped and steamed.
- 1 Cup Shelled Edamame
- 1 Cup Cucumber,chopped into discs
- 1 Medium Avocado,chopped
- ¼ Cup Sliced Onion
For Salad Dressing
- 2 Tbsp Dark Soy Sauce
- 1 Tbsp Red Chili sauce
- ½ Tsp Red Pepper Flakes
- 2 Tbsp Lime Juice
- ¼ Tsp Crushed black pepper
- ¼ Tsp Garlic Powder
Instructions
- Take a small bowl and whisk together all the ingredients required for marinade/dressing.
- In a large bowl place all the vegetables and toss everything together.
- Place in the refrigrator for chiling for sometime.
- Enjoy with a side of your choice or just like that.
