Air Fryer Aloo Parwal/Parwal ki Sabji. Easy 20-minute Aloo Parwal. Sliced potato and Parwal are mixed with a few spices and a little oil and cooked in an air fryer till they look crispy, crunchy, and delicious. This dish is vegan and plant-based side.

What is Parwal?
Parwal, or pointed gourd, is a green vegetable popular in the Indian subcontinent. It is delicious and has an earthy taste to it.
Growing up, Parwal dishes were quite typical in our home. My mother, grandmother, and aunts used to make different types of Parwal recipes. They were delicious and mostly eaten with roti, poori, or paratha.
I love to make Bihari Parwal Masala(Dry) at any time; however, Aloo Parwal or Aloo-Parwal With Chana Dal is also our family favorite.
What is Aloo Parwal is Sabzi?
This recipe is for dry aloo parwal. This simple recipe needs some basic Indian spices and a touch of oil.

Why Air Fryer Aloo Parwal?
Aloo Parwal dry fry or aloo parwal ki sookhi sabzi doesn't take much time in wok/pan as well. However, making it in an air fryer ensures that it doesn't take much oil and still tastes crunchy. It takes one tbsp of oil, which is fantastic because it is still quite crispy and crunchy. Cooking in wok needs more oil, which I am trying to avoid for several reasons.
Ingredients Needed?
Potato /Aloo-I prefer red potatoes or Yukon gold.
Parwal- In India, you get two or three types of parwal varieties, but here in the USA, we only get one type. I will suggest fresh Parwal and not frozen ones. I do not prefer the texture of frozen ones. They are more chewy and take a lot of time to cook.
Spices- Turmeric Powder, Kashmiri red chili powder, Salt.
For whole spices, I have used Panch Phoran or an Indian five-spice mix. If you do not like that or are not getting hold of it, use cumin seeds instead. One tbsp of cooking oil is needed to cook this side dish.
Step-by-step recipe?
Wash and slice the potatoes and Parwal.

Mix all the spices and oil. Make sure potatoes and Parwal are coated nicely.

Line the air fryer basket with parchment paper. Arrange all the vegetables mixed with spices in one layer.


Turn everything over a couple of times during the cooking process.


Serving Suggestion,
They taste best with rice and dal. I like to serve different types of dal with it. Dal Fry/Dal Tadka, Instant Pot Chana Dal, Dal Palak (Spinach Dal), or sometimes Gujarati Dal. I love to eat roti, paratha, or poori as well.

Air Fryer Aloo Parwal
Ingredients
- 2 Medium Potatoes, sliced long
- 6 Big Parwal,sliced long
- ½ Tsp Turmeric Powder
- ½ Tsp Kashmiri red chili powder
- Salt to taste
- 1 Tbsp Oil
- ½ Tsp Cumin Seeds/Panch Phoran(indian five spice)
Instructions
- Wash and slice potatoes and Parwal.
- Mix all the spices ,Parwal and potatoes. Add oil and mix everything properly.
- Line an air fryer basket with parchment paper. Spread everything in one layer.
- If your air fryer is small do that in two batches.
- Air fry them at 370 F for 7-8 minutes or until they are crispy.
- Turn everything over a couple of times to ensure proper cooking.
- Remove from the air fryer basket and enjoy with rice or roti.
