If you are like me, you most definitely have a habit of buying canned beans, corn and tomatoes during each visit to the grocery store.
My pantry is always overfilled with these cans and all the Mexican dishes I prepare come out of that excessiveness as well. Well, it's wonderful that my family loves all types of Mexican food and they do not try to hesitate the new ones.
Man, I am not bragging about it, but recently I have been watching my grocery shopping and can say that it has a lot of improvement from where I was.
Today was one of the coldest days this winter. My throat was all itchy after the early morning trip to the school bus stop. Usually, I don't give much attention to my problems but for a change today, I thought I would soothe my throat.
Warm, flavorful, and tangy broth with a hint of spice was just the same comfort bowl, which I needed. It totally warmed me from the inside and I loved the taste of it.
My family polished the bowl in no time and that included the kids.
What is the Instant Pot?
It is a programmable electric pressure cooker and it has several uses right from cooking curry to steaming vegetables, boiling something. It is much safer than the traditional pressure cooker and I really love cooking in them.
The best part is we can actually leave it unattended while cooking. It's fun and food always comes out just perfect.

Can You Cook this Soup on the Stove Top?
Absolutely. Use the same cooking process in a pot and cook on the stovetop on medium flame to slow flame. Keep on stirring the pot with a big spoon (in between) so that it doesn't stick to the bottom.
What Ingredients are Needed for Instant Pot Tortilla Soup?
Black Beans- Canned black beans washed and drained will work in this recipe.
Sweet Corn- Canned sweet corn, washed and drained as well, to remove sodium content.
Red Onion- I like to use red onion, however, you can use any other type.
Garlic Cloves- Fresh chopped garlic provides amazing flavour.
Salsa- I have used medium spicy salsa.
Tomato Puree- I have used normal tomato puree in this soup.
Jalapeno Peppers- No Mexican flavour comes without using jalapeno peppers.
Taco Seasoning- The flavour comes with taco seasoning and because of that, we do not need to use so many spices. It keeps our ingredient quantity down.
Red Peppers- Chopped red peppers give a beautiful texture in the mouth with their crunch.
Avocado- Creaminess from the avocado topping gives this soup a lovely touch.
Tortilla- Long strips of tortilla gives the much-desired crunch or crispness. It's fun to taste the soup with all these textures and combinations.
Lime wedges and fresh cilantro leaves as garnish.
What Other Variations Can be Done in the Toppings and Soup?
You can make a chicken tortilla soup.
Make it vegetarian by using shredded cheese or sour cream garnish.
You can use a choice of your vegetables as topping or garnish.
You can use vegan cheese or sour cream as a garnish, in case you want that.

Ingredients
- 1 Tbsp Avocado Oil
- 4 Cloves Minced Garlic
- 1 Cup Chopped Onion
- ½ Cup Chopped Red Pepper
- 8 OZ Sweet corn (Canned)
- 8 OZ Black Beans(Canned)
- 1 Cup Salsa(Medium)
- 8 OZ Tomato Puree
- 1 Tsp Red Pepper Flakes(Optional)
- 2 Tbsp Taco Seasoning
- ½ Tsp Paprika
- ½ Tsp Cumin Powder
- Salt to taste
Garnish
- 1 Medium Avocado,chopped or sliced
- ½ Cup Chopped Onion
- 1 Jalapeno Chopped
- ½ Cup Chopped Green Cilantro Leaves
- 1 Lime 4 slices to serve with every bowl.
- 1 Tortilla strip (crispy or crunchy)
- 4 Cups Vegetable Broth
Instructions
- Switch on the Instant Pot and press the saute mode on.
- When it displays hot add oil to it .
- First add minced garlic and chopped onion to the Instant pot till they look transparent.
- Add all the other spices,salsa and vegetables to the Instant pot. Saute and add vegetable broth to the pot as well.
- Close the lid .Cook the soup on high pressure for 7 minutes.Check for pressure valve.It should be in the seal in position.
- When its done leave it just like that.
- Let the pressure release naturally.
- Open the lid ,taste the seasoning.
- Cut tortillas into long strips .
- Sprinkle some oil and air fry them for 4-5 minute on 360 f.
- Ladle them into big soup bowls .Garnish them with their favorite topping and serve immediately.
- Enjoy.
