Instant Pot Tortilla Soup/Instant Pot Vegan Tortilla Soup

Instant Pot Vegan Tortilla Soup. Rich, hearty and super flavorful. This tortilla soup is easy to prepare and a great one-pot comfort food for busy weeknights or cosy weekends. This 20-minute soup is made of your basic pantry or fridge staples. Top with your favourite toppings and this soup is a great crowd pleaser as well as loved by kids.

Ingredients
  

  • 1 Tbsp Avocado Oil
  • 4 Cloves Minced Garlic
  • 1 Cup Chopped Onion
  • ½ Cup Chopped Red Pepper
  • 8 OZ Sweet corn (Canned)
  • 8 OZ Black Beans(Canned)
  • 1 Cup Salsa(Medium)
  • 8 OZ Tomato Puree
  • 1 Tsp Red Pepper Flakes(Optional)
  • 2 Tbsp Taco Seasoning
  • ½ Tsp Paprika
  • ½ Tsp Cumin Powder
  • Salt to taste
Garnish
  • 1 Medium Avocado,chopped or sliced
  • ½ Cup Chopped Onion
  • 1 Jalapeno Chopped
  • ½ Cup Chopped Green Cilantro Leaves
  • 1 Lime 4 slices to serve with every bowl.
  • 1 Tortilla strip (crispy or crunchy)
  • 4 Cups Vegetable Broth

Method
 

  1. Switch on the Instant Pot and press the saute mode on.
  2. When it displays hot add oil to it .
  3. First add minced garlic and chopped onion to the Instant pot till they look transparent.
  4. Add all the other spices,salsa and vegetables to the Instant pot. Saute and add vegetable broth to the pot as well.
  5. Close the lid .Cook the soup on high pressure for 7 minutes.Check for pressure valve.It should be in the seal in position.
  6. When its done leave it just like that.
  7. Let the pressure release naturally.
  8. Open the lid ,taste the seasoning.
  9. Cut tortillas into long strips .
  10. Sprinkle some oil and air fry them for 4-5 minute on 360 f.
  11. Ladle them into big soup bowls .Garnish them with their favorite topping and serve immediately.
  12. Enjoy.
