Kurkuri is a Hindi word that means crispy and crunchy and Bhindi is the Hindi name for okra/ladies finger. It is one of the most popular recipes of Bhindi in north India. This bhindi dish is a must for summer weddings or party menus back home.
What Ingredients do we need for making Kurkuri Bhindi?
Kurkuri bhindi as the name suggests has a star ingredient, which is okra or bhindi. Other than that we will need a few spices like turmeric powder, salt, red chilli powder, pomegranate seeds powder, coriander powder, rice flour, lemon juice and one tsp of oil.
How to Make Kurkuri Bhindi?
Wash okra/bhindi with running tap water. Dry it with a towel/paper towel. Cut both the ends of okra and make thin long slices out of it. Take a bowl, place all the okra in it.
Add turmeric powder, salt, rice flour, red chilli powder, pomegranate seeds powder, coriander powder and a little bit of oil to it. Mix it well so that okra gets coated with all the spice mix.
Preheat the air fryer on 400 f for 1-2 minutes. Air fry spice mix coated okra on 400 f for 5-6 minutes. Turn them in between and check them so that they do not burn.
Make sure you are placing okra in one layer otherwise it won't be very crispy. Depending on the quantity of okra do it in one or two batches. Sprinkle some lemon juice before serving and enjoy your air fried Kurkuri Bhindi.
What to Serve with Kurkuri Bhindi?
Personally, I like to eat them with white rice and Dal Palak/Lentil Soup with spinach.
Believe me, the combination of rice, dal and Kurkuri bhindi is just killer. With each bite, you will feel that crunch and taste that compliments the creamy texture of lentils.
You can have them as an appetizer or as a snack and you can serve them with a chutney or a dip.
I like to serve them with green mint cilantro chutney. It just tastes awesome with anything and everything.

Air Fried Kurkuri Bhindi
Ingredients
- 1 Lb Okra/Bhindi
- 1 Tsp Turmeric Powder
- 1 Tsp Red Chili Powder
- 1 Tsp Coriander powder
- 1 Tsp Pomegranate seeds Powder
- 2 Tbsp Rice Flour
- Salt according to your taste
- 1 Tsp Oil of your choice. I have used avocado oil.
- 1 Tbsp Lemon/Lime Juice
Instructions
- Wash and dry okra.
- Cut both the ends,Slice okra into thin long slices.
- Mix all the spices and rice flour Mix okra slices well with spice mix. Mix oil as well.
- Preheat air fryer on 400 f for 2-3 minute.
- Air fry spice coated okra for 5-6 minutes. Make sure you turn them in between to prevent them from burning. Do it in two batches. Air fry them till they feel crisp and look light brown.
- Serve them with a dip of your choice.
