I am sure that you have tried green beans and potatoes in some form or another. However, have you ever tried green beans and potato fry with curry spices?
Packed with flavours from fragrant Indian spices, this dish is a staple in most Indian homes; however, in most cases, the method varies.
I have tried this simple homely recipe in the air fryer and believe me, it got me hooked for life. I love the air fryer and how it gives an amazing crunchy texture to the vegetables without much cooking time.
Growing up we used to love this green beans and potato fry with some rice and dal. My dad used to make the best fry, however, he always used a pan. Since we're cutting down on oil intake I tried it in the air fryer.
Why Air Fryer Green Beans & Potato Fry?
You must be aware that I love air fryers. I actually use it 2-3 times a day every day.
I use it for reheating, baking, grilling, and cooking; so many things. If you have not started using this wonderful appliance till now, my friend, you are missing something.
The air fryer uses very little to zero oil for most of the recipe and uses much less time than any conventional cooking.
Cooking in an air fryer takes less time and involves just one or two things to wash/clean after cooking.

What Ingredients are Needed for This?
Potatoes- I have used Yukon gold potatoes for this recipe. I have peeled the potatoes and chopped them into cubes. You can choose your shape but try to keep beans and potatoes of the same size; that ensures proper cooking.
Russet potatoes are not very suitable for this recipe.
Green Beans- I have used fresh green beans and suggest you should do the same. However, if for some reason you don't have fresh ones available, use frozen ones. Your texture may be a little different from frozen ones.
I have not used canned green beans so do not know how it works in the recipe.
Onion- I like to use red onion in my Indian recipes since it brings the right flavour on. You can use your choice of onion but I will suggest the same for you.
Spices- I have used aromatic Indian spices to make it flavourful.
Ginger Garlic Paste- used in this recipe and that is freshly homemade. I have used the same quantity of ginger and garlic and made a paste of them.
Oil- Any oil of your choice like avocado oil or grapefruit oil for this recipe.
How to Make It-
I have totally simplified the recipe. After chopping everything, mix everything together and cook it in the air fryer at 360 f. Cook for almost 10 to 12 minutes and stir it along with the help of a spatula or fork.
You can use parchment paper for the air fryer. That keeps the surface clean and prevents sticking.

Air Fryer Green Beans & Potato Fry
Ingredients
- 1 Cup Potato cubes in small size
- 1.5 Cups Chopped Green Beans
- 1 Small Chopped Onion
- ½ Tsp Turmeric Powder
- 1 Tsp Coriander powder
- ½ Tsp Red Chili Powder (Optional)
- ¼ Tsp Garam masala Powder
- Salt to taste
- ½ Tsp Ginger Garlic Paste
- 1 Tsp Oil
- 1 Tsp Lime juice
Instructions
- Wash the vegetables and chop them.
- Mix all the vegetables with all the spices and oil.
- Pre heat the air fryer to 360 f.
- Arrange parchment paper on the air fryer basket as a lining.
- Place all the vegetables with spice mix in the air fryer and cook for 10-12 minutes.
- Stir in between to prevent burning.
- Your time can increase or decrease depending on your potato and green bean size.
- Remove from the air fryer once they are cooked according to your tastes.
- Sprinkle some lime juice and garnish with cilantro leaves.
- Enjoy with a side of your choice!!!
