This is an easy 20-minute recipe for Instant Pot Veggie rice pulao. It's simple and uses only essential ingredients. This rice recipe is ideal for a quick lunch/dinner or a lunch box. It goes well with raita, dal, or any curry.

Ingredients Needed for this Instant Pot Veggie Rice pulao,
Basmati Rice- Long grain basmati Rice.They make this pulao delicious.
Sliced onion is used in this recipe to add a lovely caramelized sweetness to the dish.
Ghee or oil—Ghee makes this rice pulao rich and fragrant, but depending on your taste, you can use any neutral oil, like avocado or grapefruit. However, olive oil and coconut oil are not recommended.
Whole Spices- Fragrant spices like cinnamon sticks, bay leaves, and cumin seeds are used.
Aromatics- Ginger- Garlic Paste, slit green chili, salt and garam masala powder.

How to cook?
Cooking in an Instant Pot is super simple. It has a rice cooking button; however, I prefer to cook the rice pulao manually. This way, it takes less time, and rice grains come out perfectly. I cook my rice on high pressure for five minutes. Let the steam release naturally, and fluff the rice with a fork after removing the lid.

Serving Suggestion,
You can serve them with Pahadi Cucumber Raita or Dal Bukhara Instant Pot Chana Dal. Sometimes, I like to serve them along with Bengali Aloo Dum or Dum Paneer Masala.

- Wash basmati rice with tap water and place this on a plate.
- Switch on the saute button of the Instant Pot .When it displays hot add oil /ghee .
- Add Bay leaf ,cinnamon sticks,Cumin seeds to the pot and let it crackle.
- Saute till both look golden pink.
- Add all the veggies to the pot,saute and add salt to them.
- Furthermore add rice and mix everything together.Do this with a very light hand.
- Add garam masala powder and now is the time to add water.
- Mix everything properly with water.Make sure rice grains are covered in water and stay in one layer.
- Cancel the saute button and put on the lid.
- Cook rice on high pressure for five minutes.
- Let the steam release naturally.
- Remove the lid after that and fluff the rice with a fork.
- Serve with a side of raita.
- Enjoy.
