Grilled Vegetables Couscous Salad

Ingredients
  

  • 1 Cup Cooked Couscous
  • 1 Tbsp Olive oil
  • Salt to taste
  • ½ Tsp Crushed Black Pepper
  • ½ Tsp Red Pepper flakes
Veggies
  • Cup Pumpkin
  • Cup Eggplant
  • ¼ Cup Red Pepper
  • ¼ Cup Green Pepper
  • ¼ Cup Sliced Onion
  • 1 Tbsp Scallions
  • ¼ Cup Cherry Tomatoes
For Dressing
  • 1 Tbsp Lime Juice
  • 2 Cloves Minced Garlic
  • ½ Tsp Red pepper flakes
  • 1 Tsp Dijon Mustard
  • 2 Tbsp olive Oil
  • ½ Tsp Salt + Crushed BlacK Pepper
Spices for grilling the veggies
  • Salt to taste
  • ½ Red Pepper Flakes
  • 1 Tbsp Olive Oil

Method
 

  1. Cook Couscous according to the package instruction.
  2. Mix all the veggies with salt ,red pepper flakes,and olive oil.Air fry them at 375 f for 6-7 minutes.They will be grilled and cooked.
  3. Remove veggies from the air fryer.Mix couscous ,grilled veggies whisk all the ingredient written under dressing and pour it over every thing.
  4. Mix and enjoy.
