This salad is our family's favorite salad for the summer months. We like to have this every other day for lunch or dinner. It's a cool-looking, vibrant salad with a lovely crunch.
My husband watches his diet and prefers to have filling nutritious salads for lunch. So this is his lunch pick most of the time.
Charlotte weather is so humid this summer, which means that having this refreshing salad makes any meal brighter and the fun thing is that you don't have to sweat over the stovetop.

Ingredients Needed for Chickpea, Cucumber & Tomato Salad-
Chickpeas- I have used overnight soaked dry chickpeas, which are boiled and cooled. Canned chickpeas can be used easily to cut down time.
Tomatoes- Use ripe sweet tomatoes for this recipe. Chop them and mix with other ingredients.
Cucumber- Seedless English cucumbers are the best, however, you can remove seeds and use any other type of cucumber as well.
Onion- Chopped red onions are the best. They are crunchy and flavorful.
Lime juice, fresh chopped cilantro, and fresh green chilies are the other ingredients.
Weight Loss Salad-
Full of fiber, protein, and vitamins, chickpeas are the perfect vegan/vegetarian option for a healthy diet. This salad contains cucumber, and tomatoes as well. They have a large percentage of water and an abundance of vitamins and antioxidants. This is the perfect meal for a no-oil meal plan and several other diets, and this salad is just an amazing option.
Note-
This salad is best when eaten freshly made. Always mix them just before serving, otherwise, they get soggy because of water content. You can chop and store everything separately and then mix it just before you need to serve.

Chickpea Cucumber & Tomato Salad
Ingredients
- 1 Cup Cherry tomato (halved) or any other tomato (chopped)
- 1 Cup Cucumber ,chopped
- ¼ Cup Red Onion Chopped
- 1 13 oz Chickpeas or overnight soaked and boiled chickpeas.
- 1 Lime juice
- 1 Fresh chili pepper de seeded and chopped (optional)
- Salt to taste
- 1 Tbsp Olive Oil
- ¼ Cup Fresh cilantro chopped
- Pinch of crushed black pepper
Instructions
- In a large bowl, take chickpeas, cucumbers, onions, and tomatoes.
- Whisk oil, lime juice, fresh chilies, crushed pepper, salt, and chopped cilantro.
- Drizzle it over the salad and toss the salad together.
- Enjoy as a side or your main meal!!!
