Classic Mango Coconut Panna Cotta. Rich, creamy, and super indulging, this panna cotta will take your taste buds on a trip of deliciousness. It's easy, vegan and has just the perfect amount of sweetness. If you love the combination of mango and coconut, this dreamy dessert is just perfect for you.

Summer months call for chilled fruity desserts and if you are a mango lover like me you will not leave a chance to indulge in this awesome fruit.
Fresh fruit is awesome for this dessert, but good quality canned mango-like Alphonso or Kesar works best in this recipe. They are easy to manage, fuss-free and require less time.
I always prefer desserts that are not very sweet and for this reason, I mostly try to balance the sweetness of all the ingredients.
It's not like I avoid sugar but I definitely do not overdo it. Furthermore, if one component of the dessert is extra sweet for my taste, I skip adding the sugar to another component. I did the same while making this wonderful dessert.
Since I have used canned mango for my mango layer and they are overly sweet, I did not use the sugar in my other component coconut milk. Believe me, that balance is the soul of the recipe.
When you dive into the goodness with a spoon, the layers make you crave for more. It is just the perfect combination of creamy and sweet flavour.

How to Use Fresh Mango in This Dessert-
Blend mangoes after peeling and chopping. It should be a smooth puree. Then, mix sugar according to your taste if you find them less sweet or bland. If you think they are sweet enough for you, do not mix sugar.
How Long Does it Take to Set the Layers?
I always prefer to make them in the evening or at night. That way, setting them is easy and they are good to serve the next day.
The making of panna cotta doesn't involve much time but the set does require some patience. Do not make this in a hurry, otherwise, it won't set and you will be disappointed.
What Type of Texture Are We Expecting of This Panna Cotta?
Panna Cottas are soft, delicate, spongy, and airy. They do not have thick layers. The quantity of agar is important for making the layers soft.
What Type of Coconut Milk is Required?
I have used canned coconut milk and using that will be convenient for you as well. Just whisk and mix the milk before using it. Coconut milk has a tendency to separate in the can and by mixing it we are making it a smooth liquid.
