Cowboy Caviar- super fun to make and eat, this colourful dip is the easiest of all recipes. A perfect side dish for barbecues and pot lucks, this dish is vegan and gluten-free.
What is Cowboy Caviar?
Cowboy caviar is a dip made of beans, tomatoes, red onions, and of course avocado. If you like tomato salsa, Pico de Gallo, and bean salad, then you will also love this recipe.
In addition, a lovely vinaigrette compliments everything as a whole, and the end result is super addictive cowboy caviar.
Lovely and easy, this colourful dip is hearty and delicious. You can use it for chips and dips as well as a side for any protein. I love to have them anywhere or with anything. This side dish is my absolute favourite.
Furthermore, making this dip is super simple. Firstly, chop everything together. Then, mix them properly. After that, make a light yummy dressing and drizzle it over the dip. That's it! In no time, your dip will be ready.
You can prepare this dip in advance and keep it covered in the fridge for up to 6 hours. You can use ingredients you like and replace some of them.
I love to use normal canned beans, black beans and white beans both. For the corn, you can use grilled corn on the cob but sometimes, when fresh corn is not available, I use canned corn. Additionally, creamy avocados are a must.
I also prefer to use any kind of fruit in this for a sweet and tangy touch, such as mango or strawberries. However, it depends entirely on you and your tastes. It's not mandatory for cowboy caviar, and it's just something I like.
I also make a simple dressing for this dip. In it, I use good quality olive oil, lime juice, honey, red pepper flakes, salt and pepper.
However, if you do not have lime or lemon, you can use fresh orange as well.
