Cowboy Caviar- super fun to make and eat; this colorful dip is the easiest of all recipes. A perfect side dish for barbecues and potlucks, this dish is vegan and gluten-free.

What is Cowboy Caviar?
Cowboy caviar is made of beans, tomatoes, red onions, and avocado. You will also love this recipe if you like tomato salsa, Pico de Gallo, and bean salad.
In addition, a lovely vinaigrette compliments everything as a whole, resulting in super addictive cowboy caviar.

Lovely and easy, this colorful dip is hearty and delicious. You can use it for chips, dips, and a side for any protein. I love to have them anywhere or with anything. This side dish is my absolute favorite.
Furthermore, making this dip is super simple. Firstly, chop everything together. Then, mix them properly. After that, make a light, yummy dressing and drizzle it over the dip. That's it! In no time, your drop will be ready.
You can prepare this dip in advance and keep it covered in the fridge for up to 6 hours. You can use ingredients you like and replace some of them.
I love using regular canned, black, and white beans. For the corn, you can use grilled corn on the cob, but sometimes, when fresh corn is not available, I use canned corn. Additionally, creamy avocados are a must.
I also prefer to use any fruit in this for a sweet and tangy touch, such as mango or strawberries. However, it depends entirely on you and your tastes. It's not mandatory for cowboy caviar; it's just something I like.
I also make a simple dressing for this dip. I use good-quality olive oil, lime juice, honey, red pepper flakes, and salt.
However, if you do not have lime or lemon, you can also use fresh orange.

Cowboy Caviar
Ingredients
- 1 Can Black Bean
- 1 Can Sweet Corn
- 1 Big Chopped Ripe Mango
- 1 Big Avocado,chopped
- ½ Medium Chopped red onion
- 1 Jalepeno,chopped
- ½ Cup Chopped Fresh Cilantro
For Dressing
- ¼ Cup Olive Oil
- ¼ Cup Lemon /Lime Juice
- 1 Tbsp Honey /Brown Sugar
- ½ Tsp Red Pepper flakes
- Pinch of salt and pepper
Instructions
- Whisk all the ingredients for dressing .
- Arrange all the vegetables in a big bowl and mix them together.
- Pour the dressing over the vegetables and mix them up.
- keep it in the fridge before serving .
- Serve it with the choice of your main.
