Dates,Pecan ,Lemon Cake with Caramel Sauce Topping.
A rich ,delicious and moist cake with the gooey caramel sauce.
Ingredients
- 1 Cup Dates (chopped)
- 1 Cup Pecans(Chopped)
- 1 Tsp Baking Soda
- 1 Cup Hot boiling water
- 1.5 Cups All Purpose flour
- 1 Tsp Cinnamon Powder
- Pinch of salt
- ½ Cup Unsalted Butter(room temp)
- 1 Cup Castor sugar
- 1 Egg(room temp)
- 2 Egg Yolks
- 1 Tbsp Lemon juice
- 1 Tbsp Vanilla extract
- For Caramel Sauce
- ½ Cup dark brown sugar
- 3 Tbsp Butter
- ⅓ Cups Heavy cream or half and half.
- 1 Tsp Baking Soda
- 1 Tsp Vanilla essence
Instructions
- Place Chopped Dates and Chopped pecan in a bowl.
- Add baking soda and mix it with a fork .
- Add boiling water to it and mix well.Keep it aside.
- Sift flour,salt and cinnamon together.Keep it seperate.
- Take butter in bowl and using a mixture ,whisk /beat it until creamy.
- Add sugar and beat until light and fluffy.
- Add egg and egg yolks one by one and beat it .
- Add vanilla and lemon juice and once again beat.
- mix flour and dates mixture to it and mix it with wooden /Silicon spatula.
- Prepare a pan for baking.Preheat oven to 325 F.
- Spoon the batter in to the prepared pan.
- Its a slow baked cake so you have to bake it around 1 hour .
- For Caramel Sauce.
- In a small saucepan,melt the butter with sugar .
- When it starts bubbling add half/half or heavy cream.
- Whisk it properly and add baking soda.
- Mix it again while its bubbling.
- If it looks thick enough remove it from the gas .Keep it aside.
- Drizzle it over the cake and serve it .
- NOtes--1-You can use walnuts instead of pecan.
- While making caramel sauce you need to be careful . don't burn it .
- You can make this cake without the sauce too.
