Dates,Pecan ,Lemon Cake with Caramel Sauce Topping.

A rich ,delicious and moist cake with the gooey caramel sauce.

Ingredients
  

  • 1 Cup Dates (chopped)
  • 1 Cup Pecans(Chopped)
  • 1 Tsp Baking Soda
  • 1 Cup Hot boiling water
  • 1.5 Cups All Purpose flour
  • 1 Tsp Cinnamon Powder
  • Pinch of salt
  • ½ Cup Unsalted Butter(room temp)
  • 1 Cup Castor sugar
  • 1 Egg(room temp)
  • 2 Egg Yolks
  • 1 Tbsp Lemon juice
  • 1 Tbsp Vanilla extract
  • For Caramel Sauce
  • ½ Cup dark brown sugar
  • 3 Tbsp Butter
  • Cups Heavy cream or half and half.
  • 1 Tsp Baking Soda
  • 1 Tsp Vanilla essence

Method
 

  1. Place Chopped Dates and Chopped pecan in a bowl.
  2. Add baking soda and mix it with a fork .
  3. Add boiling water to it and mix well.Keep it aside.
  4. Sift flour,salt and cinnamon together.Keep it seperate.
  5. Take butter in bowl and using a mixture ,whisk /beat it until creamy.
  6. Add sugar and beat until light and fluffy.
  7. Add egg and egg yolks one by one and beat it .
  8. Add vanilla and lemon juice and once again beat.
  9. mix flour and dates mixture to it and mix it with wooden /Silicon spatula.
  10. Prepare a pan for baking.Preheat oven to 325 F.
  11. Spoon the batter in to the prepared pan.
  12. Its a slow baked cake so you have to bake it around 1 hour .
  13. For Caramel Sauce.
  14. In a small saucepan,melt the butter with sugar .
  15. When it starts bubbling add half/half or heavy cream.
  16. Whisk it properly and add baking soda.
  17. Mix it again while its bubbling.
  18. If it looks thick enough remove it from the gas .Keep it aside.
  19. Drizzle it over the cake and serve it .
  20. NOtes--1-You can use walnuts instead of pecan.
  21. While making caramel sauce you need to be careful . don't burn it .
  22. You can make this cake without the sauce too.
