Full of flavor, this Thai-inspired Mushroom & Thai Basil Rice is just delicious. It's quick to cook and perfect for a comforting lunch, dinner, or lunch box. Kids love this rice so much that they will ask for it again—a vegan and plant-based dish.

So, summer vacation has started, and the kids are home. My kids always want to have different kinds of cuisine besides the usual dal chawal. They are teenagers, and when they are home from the dorm, I always want to make sure they have hot, fresh food available. Since they eat whatever they can cook or is available at the cafeteria, giving them nutritious meals is also very important.
I bought some fresh Thai basil from the store, and since kids love good fried rice, I decided to make a delicious mushroom & thai basil rice.
As Usual, the recipe is so simple that anyone can cook it in one shot (including them). It uses very few ingredients, and it will surprise you with its flavor and taste.
What type of rice is used?
The most important point is to use cold, leftover rice for better texture. I have used basmati rice because that's what we cook at home, and it was the leftovers. Feel free to use sona masoori, jasmine, or any other rice you choose. The different rice will bring a little bit of texture change.
What type of Mushroom is required?
I prefer baby bella or button mushrooms because they are mild and readily available. However, I don't see why other mushrooms can't be used. You can also buy sliced mushrooms.
Ingredients Required,
Cooked Rice,
Sliced Mushroom
Fresh Thai Basil Leaves.
Chopped scallion and fresh Thai chilies/
Dark Soy Sauce & Chili Oil.
Chopped onion, garlic and salt.
Cooking oil and fresh scallion for garnish.
Serving Suggestion?
This Mushroom Thai Basil rice is good just like that. However, if you want to serve something alongside, it can be noodles, Asian salads, or Thai curry. If you can have eggs, go ahead with a topping of fried eggs.

Method
- Take a wok.Heat oil in it.
- Add chopped garlic and onion till they look caramalized.
- Add sliced mushrooms and cook till they are golden. Furthermore add basil leaves ,soy sauce,chili oil.
- Add rice and mix everything by turning the rice over a few times. Make sure you don't break the rice.
- Taste the rice and if you want to add some salt add it now.Mostly I do not need salt because soy sauce has salt in it.
- Garnish with some fresh scallion and serve them hot.
