This Thai Mango Salad with Roasted Peanuts is a crunchy, light, delightfully refreshing salad made with tangy mango, crunchy red bell pepper, refreshing cucumber, and sweet carrot. A handful of peanuts and sprouted moong beans combined with a zesty, sweet, and spicy lime chili dressing make this salad droolsome.

Why you will love this Salad?
Chances are that you are a fan of Thai Flavors. So, you will love this salad as a side dish to a perfect Thai meal or as a light main meal.
This salad is delicious, and trust me when I say I can drink this dressing. Slurp, slurp. It's tangy, sweet, spicy, and just awesome.
It is one of the easiest dishes to take out for a potluck or prepare for a party. You make the salads, prepare the dressing, and pour it over the salad when serving. It is one of the best salads I have ever tasted; even my kids love it.
Ingredients needed to make this Salad?
Raw Mango/Unripe Mango—I love how mango imparts a lovely tangy, sweet flavor to this salad. Please make sure that you are using raw, unripe mangoes for texture. Soft, ripe, sweet mangoes are not ideal for this recipe.
Cucumber—A long English cucumber works well in this recipe. English cucumbers don't have many seeds and have a fantastic texture.
Carrot- Long strips of carrot help in creating a sweet texture.
Sliced Onion/Shallots- A few slices create that punch from the onion's sharpness.
Red Bell Pepper- Red bell pepper gives crunch and sweetness to both.
Moong Sprouts and Roasted Peanuts.
Fresh chopped Cilantro and Thai basil leaves.
For Dressing-
Lime juice, Dark Soy Sauce, bird's eye fresh chilies, Cherry tomato, brown sugar/coconut sugar, salt, and crushed black pepper.
Steps for preparing Thai Mango Salad with Roasted Peanuts,
- The first step is to crush the dressing ingredients in a mortar and pestle and keep them in the refrigerator for later use. Using a mortar and pestle helps combine the crushed tomatoes and chilies with all the other ingredients.
- Slice all the other vegetables and fruit, including Mango. Cutting sides and then making thin strips is better. It could be tricky, but slicing them this way will make things easier. Mangoes have ample-sized seeds like avocados, so working around them is always better.
- Chop fresh basil and cilantro.
- Store everything in the refrigerator, and drizzle the dressing over the salad when it is time to serve. Mix everything nicely with the help of a tong or two forks. Enjoy!!
