Chickpea Cucumber & Tomato Salad

Ingredients
  

  • 1 Cup Cherry tomato (halved) or any other tomato (chopped)
  • 1 Cup Cucumber ,chopped
  • ¼ Cup Red Onion Chopped
  • 1 13 oz Chickpeas or overnight soaked and boiled chickpeas.
  • 1 Lime juice
  • 1 Fresh chili pepper de seeded and chopped (optional)
  • Salt to taste
  • 1 Tbsp Olive Oil
  • ¼ Cup Fresh cilantro chopped
  • Pinch of crushed black pepper

Method
 

  1. In a large bowl, take chickpeas, cucumbers, onions, and tomatoes.
  2. Whisk oil, lime juice, fresh chilies, crushed pepper, salt, and chopped cilantro.
  3. Drizzle it over the salad and toss the salad together.
  4. Enjoy as a side or your main meal!!!
