Vine Ripe Cherry Tomato ,Basil Pesto and Rosemary Focaccia

Mid-week blues.😣😥

Baking is a definite stress buster. It lifts the spirits. ❤

A few stems of fresh vine cherry tomatoes and basil were looking for my attention, so I thought of baking focaccia for lunch. 🙂

Back from his trip, the man of the house wanted to take me out for lunch. He even promised to keep his phone on mute for sometime. 😂😉

So the foccacia had to wait.🙂

Will pair this wonderful bake with a salad or soup for dinner. ❤

It’s easy, fun, and really delicious. 😋

Ingredients,

All purpose flour-3 Cups

Instant yeast-1 pack

Sugar -1 table spoon.

Salt-1 teaspoon

Olive oil – 2 +3 tablespoon

Hot water-1 2/3 cups ,if you need more to make the dough properly please use more.

Salt and Pepper for garnishing.

Vine ripe cherry tomatoes -2 strings

Fresh rosemary leaves-1 tablespoon

Basil pesto -2 tablespoon.

Fresh basil leaves-a few.

Method,

Mix flour,Yeast, salt and sugar . Whisk it properly.

Mix 2 tablespoon of olive oil with water . Please ensure that water is hot .

Mix the dough nicely and press it in the desired pan. I have used tart pan .

Cover it with a cloth and keep it in a warm place to rise.

It will double in size.

Pre- heat oven to 375f

Take the pan again ,poke holes in the dough with the help of your finger.

Season it nicely .

Arrange all the tomatoes in the holes .Spread basil pesto over it or into the holes.

Spread rosemary all over the dough.

Spread some olive oil over the bread.

Cover and leave for 30 minutes.

Bake on 375f for 30 to 40 minutes.

Before slicing and serving let it cool down first.

Serve with soup or salad.
