Either you love eggplant or you hate eggplant.
There is not anything in between. I consider myself a huge eggplant/baigan lover.😋😋😎
Many people, including my kids, don't appreciate eggplant. I have heard a friend of my husband's saying that he doesn't even walk in the same lane eggplants fields are.
Maybe that's a funny overstatement.😀😀
So, today I am sharing a recipe that is a little vilayati /videshi.😎😎
It's a couscous stuffed eggplant half with lots of herbs and spices infused into it.. Topped with grated paneer and little parmesan, I have baked this in the oven on 400f.
Later, for a beautiful crust, keep it in the broiler or in the air fryer for a few minutes.
Here I would love to mention that it was so delicious with all the textures and spiciness that everyone at home, including my kids, loved it.❤💕
So if you want a change in your routine eggplant recipes, try this for sure.
