There is not anything in between. I consider myself a huge eggplant/baigan lover.😋😋😎
Many people, including my kids, don’t appreciate eggplant. I have heard a friend of my husband’s saying that he doesn’t even walk in the same lane eggplants fields are.
Maybe that’s a funny overstatement.😀😀
So, today I am sharing a recipe that is a little vilayati /videshi.😎😎
It’s a couscous stuffed eggplant half with lots of herbs and spices infused into it.. Topped with grated paneer and little parmeasan, I have baked this in the oven on 400f.
Later, for a beautiful crust, keep it in the broiler or in the air fryer for a few minutes.
Here I would love to mention that it was so delicious with all the textures and spiciness that everyone at home, including my kids, loved it.❤💕
So if you want a change in your routine eggplant recipes, try this for sure.
2 Eggplants cut into half lengthwise
1 Medium Onion chopped finely
3 Table Spoon of oil.
2 cloves of garlic
1 cup of cooked couscous
1/2 cup of grated paneer
1/2 cup of grated Parmesan cheese
1/3 cup of cherry tomatoes
4 tablespoons of olive oil
1 teaspoon of coriander powder
1 teaspoon of Kashmiri Mirch or paprika
1 teaspoon of black pepper powder
1 tablespoon of fresh mint
1 tablespoon of fresh cilantro
1 tablespoon of lemon juice
How to make Stuffed grilled eggplant-
Preheat oven to 400 f.
Cut eggplant into half.
Drizzle some olive oil and sprinkle some salt on it.
Place them into a baking tray flesh side up and roast until they are tender.
While your eggplant is roasting, prepare your filling by putting a pan on the stove.
Add one tablespoon of oil.
When the oil is hot, add onion and garlic to it.
Saute till they are translucent.
Add couscous to it.
Add all the other spices and lemon juice.
Mix cherry tomatoes and cilantro into it.
Now take the eggplant halves and scoop it up with a spoon.
Mix 1/2 cup of roasted eggplant flesh into the mixture.
How to Stuff the Eggplants for Baking
Take one eggplant half and fill it generously with the couscous mixture.
Sprinkle some grated paneer and Parmesan cheese.
Sprinkle some olive oil.
Keep it under the broiler for 5-7 minutes or till the top looks golden brown.
Alternatively, you can always opt for the air fryer.
Serve it hot.
You can drizzle some cilantro or mint chutney before serving.
