


No need for taking out, you won't miss visiting any Asian restaurants after making these spicy, tangy veg stir-fried noodles. I am telling you, this recipe is one of the easiest recipes ever, and it only takes around 20 minutes of your time.
I love how easy it is to feed kids lots of crunchy and crispy vegetables with these stir-fried noodles. They will ask for seconds, and I'm sure parents will be more than happy to oblige. You can use chickpea noodles, whole wheat noodles, or buckwheat soba noodles for a much healthier option.
In this recipe, I am sharing an easy stir fry sauce recipe which you can make by using easily available ingredients. These stir fry noodles are so yummy that you will make them again and again.

Stir Fried Veg Noodles (Better than take out!)
Ingredients
- 10 Oz Soba Noodles/Noodle of your choice(boil till al dente and spread it in a big plate for later use .You can use little oil ,so that they won't stick to each other,though its not mandatory)
- 1 Tbsp Avocado oil/Oil of your choice.
- 1 Cup Broccoli florets.
- ½ Cup Carrot Sticks
- ½ Cup Zucchini sticks
- 1 Cup Bell Pepper Sticks
- ½ Cup Sliced Onion
- 1 Cup Sliced Mushroom
- 1 Tbsp Chopped Garlic
For Stir Fry Sauce
- 3 Tbsp Soy Sauce
- 2 Tbsp Hoisin Sauce
- 1 Tbsp Sriracha or any chilli sauce
- 1 Tbsp Rice Wine Vinegar
- 1 Tsp Brown Sugar
- ½ Tbsp Cornstarch
- 2 Tbsp Water
- 1 Tsp Red pepper flakes(optional)
- 1 Tsp Sesame Oil
For seasoning of vegetables
- ½ Tsp Black Pepper
- ½ Tsp Salt
Instructions
Making of Stir Fry Sauce
- Mix everything written under stir fry sauce.Make sure its lump free.
Making of Stir Fried Noodles
- Take a wok /Pan .
- Add oil to it .
- Heat it .
- Add chopped garlic to it ,saute till it looks pinkish brown.
- Add onion and saute it for one minute.
- Add Mushroom to it .
- Saute for 2-3 minute on high heat .
- Add all the other vegetables and saute it till it looks good enough for your liking. I sauted mine for around 2-3 minute ,because we like crispy vegetable.Add salt and pepper to it and mix it nicely.
- Remove all the vegetables in a plate and keep it aside.
- Now add stir fry sauce in it .Let it come to a boil.
- Stir it once and mix all the boil Noodles to it .
- Mix it with the help of tongs other wise it will break.Long noodles look nice.
- After noodles are coated with sauce add all the vegetables.Just mix it with the help of a tong and spread it around.
- Serve it hot .

This is the best noodles recipe I have EVER found! My husband is still talking about them today! LOL Only changes made were veggie ratios (we like lots of mushrooms), half the srichacha (still some spice, but without giving us both killer heartburn), and no chili flakes. I used lo-mein noodles and the dish really was to die for. Thank you soooooo very much!! This will be a regular dinner in our house!
