Carrot & Peas Pulao

Simple and aromatic basmati rice cooked with carrots and peas. This goes well with any lentils, creamy curry, or simple raita.

Ingredients
  

  • 2 Cups Basmati Rice
  • 4 Cups Water
  • 1 Tbsp Ghee/Oil for vegan alternative.
  • ½ Cup Carrot Cubes
  • ½ Cup Fresh /Frozen Peas
  • 1 Bay Leaf
  • 1 Inch Cinnamon Stick
  • 1 Tsp Salt
  • ½ Cup Pomegranate Arils
  • ¼ Cup Fresh Cilantro leaves

Method
 

  1. Wash and Soak the rice for 20 minutes .Remove it from the water and let it dry on the thick layer of paper towel for 10 minutes.
  2. Now take a pan .Heat it. Add ghee /oil to it.
  3. Add bay leaf and cinnamon stick to it .Let them crackle for 30 seconds.
  4. Add chopped carrot and peas to it . Saute it on medium flame for 1 minute.
  5. Add rice and salt to it .Stir it and mix it properly .Do it for 1 minute.
  6. Add water to it .Mix water with the rice and vegetables.
  7. Cover it with a lid. keep the flame high. Check after 3-4 minutes .It will start boiling by now.
  8. Turn the flame to low and let it cook covered for 12-13 minute.
  9. Check the rice after 13 minutes. It should look cooked ,if not, leave it for 2 more minutes.
  10. Switch off the flame .Do not remove the lid .Keep it covered for 6-7 minute.
  11. Remove the lid.
  12. Garnish with Cilantro and pomegranate arils .
  13. Enjoy.
