Avocado Spinach Roti

A soft, delicious, and highly nutritious roti made of whole wheat flour, avocado, spinach, green chilies and fresh cilantro. It stays soft for long time. Serve best as a fresh roti, or as wraps for sandwiches. Goes well with any type of curry, lentils, raita or chutney.

Ingredients
  

  • 3 Cup Whole Wheat Flour
  • ½ Tsp Salt
  • 1 Avocado,ripe
  • 2 Cups Spinach Leaves(Blanched Boiled)
  • Cup Cilantro Leaves
  • 2 Green Chilies (Optional)
  • Ghee for roti.(Optional)

Method
 

  1. Grind blanched /boiled Spinach ,avocado,cilantro and green chilies to form a smooth puree.
  2. Mix whole wheat flour with salt.
  3. Make a smooth soft dough with avocado spinach puree.Cover the dough with a soft towel and let it rest on the counter.
  4. Make small balls of same size.
  5. Take a ball and make a flat dough ball out of it .Sprinkle some dry flour on it.
  6. Roll out a dough into a round circle.
  7. Take a gridle on the stove and heat it .Place rolled dough on the gridle and cook from both sides.
  8. Puff the cooked roti on the flame.Apply some ghee on the roti.(optional)
  9. Your Avocado ,Spinach roti is ready to enjoy.
