Air Fried Eggplant Fries

Panko coated garlicky eggplant sticks are air fried till crispy and delicious. Perfect and easy appetizers/snacks for non stop munching.

Ingredients
  

  • 10-12 Eggplant Sticks (Cut half the eggplant .
  • ½ Cup All purpose Flour
  • ½+2 Cup+Tbsp Almond Milk/Whole Milk
  • ½ Tsp Garlic Powder
  • Pinch of salt
  • 1 Cup Panko Bread Crumbs
  • ¼ Tsp Garlic Powder
  • ½ Tsp Red Pepper flakes
  • ¼ Tsp Crushed Black Pepper
  • A Pinch of Salt

Method
 

  1. Wash eggplant .Dry it off and make long sticks of it .
  2. Whisk all purpose flour ,milk ,garlic powder, salt. Whisk it nicely to make a lump free batter.
  3. In another bowl or plate mix panko bread crumbs ,red pepper flakes and garlic powder.
  4. Dip eggplant sticks in wet batter and then coat it with panko crumbs.
  5. Pre- heat air fryer to 400 f on 3-4 minute.
  6. Arrange breaded eggplant sticks in the air fryer.
  7. Air fry on 400 f for 5-6 minute or till they look golden crispy .Turn them around in between .
  8. Serve with a sauce ,dip or ketchup.
  9. Enjoy.
