White Bean ,Farro Soup

Ingredients
  

  • 1 Cup White Bean
  • ½ Cup Farro
  • 2 Cups Tomato Puree/Sauce
  • 1 Medium Onion.chopped
  • 1 Tbsp Garlic,Chopped
  • 1 Medium Carrot
  • ½ Tsp Italian Seasoning
  • ½ Tsp Red Pepper Flakes
  • Salt,to taste
  • ¼ Tsp Black Pepper
  • 1 Tbsp Lemon
  • 5 Cups Veg Stock /Water /Any stock of your choice
  • 2 Tbsp Olive Oil
  • Grated Parmesan Cheese (Optional)I did not use them.

Method
 

How to cook in the Instant Pot
  1. Turn on the saute button and add olive oil when it displays hot.
  2. Add onion, garlic and saute till the raw smell is gone and it feels aromatic.
  3. Add farro and saute for one minute ,this process make sure farro has a lovely nutty taste.
  4. Add carrot ,white beans and stir once.
  5. Add tomato puree /sauce/veg stock/water to the pot and stir to mix everything.
  6. Add salt ,crushed pepper ,red pepper flakes and Italian seasoning to it.
  7. Turn off the saute button and put the lid on.
  8. Pressure cook for 6 minutes. Carefully release the pressure by turning the steam valve to the venting position.
  9. Remove the lid and taste the soup.You can adjust the seasoning and thickness.
  10. Serve hot with bread or croutons.
On a stove top
  1. Take a deep pan or dutch pan.
  2. Heat oil in it.Add onion and garlic and saute till the raw smell is gone.
  3. Add farro and saute for a lovely nutty aroma and taste.
  4. Add carrot and white beans and stir once.
  5. Furthermore add tomato puree sauce and all the seasoning.
  6. Cook it covered till farro and vegetables are cooked according to your taste but still have that bite left.That will take around 10 minutes.
  7. You can always increase or decrease the thickness according to your choice.
  8. Enjoy.
