Vegetable Thukpa ( Tibetan Noodle Soup)

Ingredients
  

  • 1 Nest of Noodles (Dry or fresh ,according to your taste)
  • Water to boil the noodles
  • Salt ,to taste
  • 1 Tsp Oil
For Veggie Soup
  • 1 Tbsp Oil
  • 1 Tbsp Ginger
  • 1 Tbsp Garlic
  • 1 medium Fresh Chili Optional
  • ¼ Cup Scallion
  • ¼ Cup Onion
  • ½ Tsp Turmeric Powder
  • ½ Tsp Red Chili Powder
  • ½ Tsp Cumin Powder
  • ¼ Tsp Garam Masala Powder
  • ¼ Tsp Crushed Black Pepper Powder
  • ½ Cup Tomato Sauce/Paste/Puree
  • ¼ Cup Cabbage
  • ¼ Cup Carrot
  • ¼ Cup Mushroom
  • ¼ Cup Green Pepper
  • ¼ Cup Red Pepper
  • 1 Tbsp Soy Sauce
  • 3 Cup Veggie Stock
For Garnish
  • 1 Tbsp Cilantro
  • 1 Tbsp Lime Juice
  • 1 Tbsp Scallion
Main Ingredient
  • SAlt to taste

Method
 

  1. Boil the noodles according to the package instruction.
  2. Mix some oil with the noodles to prevent sticking. Keep it aside.
  3. Take a pan .Add oil to it.When it looks hot add chopped ginger ,garlic,green chilies,and onion.Saute to cook them perfectly .They should smell aromatic and look transparent.
  4. Add all the spices,Tomato puree,soy Sauce and mix everything.
  5. Add water /Veg Stock to the pan and let it boil.
  6. Add all the veggies once the broth starts boiling.
  7. Let everything cook for 3-4 minutes and Switch off the flame.
  8. Take a serving soup bowl.Place some noodles and pour the soup broth on top of that. Garnish with some scallion and lime juice /slices.Enjoy.
