- Take a pan .Heat oil.
- Add chopped garlic ,shallots,fresh chilies, and saute. Add kaffir lime leaves at this point.
- Add mushroom ,cherry tomato and salt.Saute to give a nice caramalization.
- Add red curry paste, sugar, soy sauce/vegan fish sauce, and give a quick stir.
- At this point add veg stock /water and mix.Furthermore, add coconut milk and let it come to a boil after mixing. Sprinkle some lime juice.
- Turn the flame off and serve in a bowl.
- Enjoy your comforting soup.
