Vegan Tom yum Soup

Ingredients
  

  • 1 Tbsp Oil
  • 1 Fresh thai Chilies
  • 3 Garlic,chopped
  • 2 Shallots sliced
  • 4 Kaffir Lime Leaves
  • 1 Tbsp Red Thai Curry Paste
  • 1 Tsp Coconut Sugar
  • 1 Tsp Vegan Fish Sauce/Soy Sauce
  • 2 Cups Veg Stock/Water
  • 1 13 oz Coconut Milk
  • ½ Cup Button Mushroom,Sliced
  • ½ Cup Cherry Tomato
  • 1 Tbsp Lime juice
  • Salt to taste

Method
 

  1. Take a pan .Heat oil.
  2. Add chopped garlic ,shallots,fresh chilies, and saute. Add kaffir lime leaves at this point.
  3. Add mushroom ,cherry tomato and salt.Saute to give a nice caramalization.
  4. Add red curry paste, sugar, soy sauce/vegan fish sauce, and give a quick stir.
  5. At this point add veg stock /water and mix.Furthermore, add coconut milk and let it come to a boil after mixing. Sprinkle some lime juice.
  6. Turn the flame off and serve in a bowl.
  7. Enjoy your comforting soup.
