Thai Curry Udon Noodles

Ingredients
  

  • 8 oz Udon Noodles
  • 1 Tbsp Red curry Paste
  • 2 Cups Coconut Milk(thick)
  • 1 Tsp Sesame Oil
  • 1 Small Onion
  • 1 Tbsp Garlic
  • ½ Tsp Soy Sauce
  • ½ Cup Broccoli
  • ¼ Cup Edmame
  • Cup Spinach
  • 1 Tsp Lime juice
  • 1 Tbsp Basil /Cilantro
  • ½ Tsp Red Pepper Flakes

Method
 

  1. Take a deep pan ,add oil and heat it.
  2. Add garlic and onion and saute till their aroma is released. Do not let them brown .
  3. Add red curry paste and saute for a few times.
  4. Furthermore, add coconut milk and water. Let it come to a boil.
  5. Add udon noodles and let it cook till your liking.
  6. Add All the vegetables and soy sauce to the noodles.
  7. Sprinkle some lime juice.
  8. Garnish with basil/cilantro ,red pepper flakes and enjoy.
  9. Enjoy your warm bowl of noodles.
