Sun Dried Tomato Pesto Pasta

Ingredients
  

  • 6 Oz Pasta cooked al dente in salted water.
for pesto
  • 3 Tbsp Sun Dried Tomato
  • ½ Cup Basil
  • 2 Cloves Garlic
  • 1 Tbsp Cashew Nuts
For Garnish
  • 1 Handful Fresh Basil Leaves
  • ¼ Tsp Red Pepper Flakes

Method
 

  1. Take a blender or grinder ,add sundried tomato with some oil ,basil leaves,garlic cloves and cashew nuts.Make a smooth puree by blending everything together.You can use boiled pasta water for making it smooth . I have not used salt because pasta was already salted however you can always use depending on your taste.
  2. Take a pan. Add one tsp of oil from sun dried tomato jar. Add sun -dried tomato pesto and saute for 30 seconds. Now add pasta to the pan and mix everything properly. Make sure pasta is nicely coated with pesto.You can use little bit of pasta water to thin out the tomatoes.
  3. Take out in a serving bowl.
  4. Garnish with basil leaves and sprinkle some red pepper before serving.
  5. Enjoy.
