Roasted Eggplant with Tahini Sauce

Ingredients
  

  • 1 Medium Round Eggplant,Sliced (Not too thin or thick)
  • 2 Tbsp Zaatar Spice Mix
  • 1 Tsp Salt
  • ½ Tsp Turmeric Powder
  • Olive oil for shallow frying of eggplant slices
  • 1 Cup Plain Vegan Yoghurt of your Choice/Greek Yoghurt
  • 1 Tbsp Tahini Paste
  • 1 Big Lemon Juice
  • 1 Tsp Paprika
  • 1 Tbsp Olive Oil
  • ¼ Tsp Crushed Black Pepper
  • Pinch of Salt
  • Pomegranate arils for Garnish
  • Mint Leaves For Garnish

Method
 

  1. Wash and dry eggplant .Slice them or cut into your desired shape.
  2. Score them with the help of a sharp knife.
  3. Coat them nicely with zaatar spice mix and salt .
  4. Heat some oil in the pan. Roast /Grill the slices till they look caramalized and cooked.
  5. Mix everything required to make the dressing.
  6. Arrange eggplant slices on a platter. Drizzle dressing over the slices.
  7. Garnish with pomegranate arils and mint leaves.
  8. Enjoy.
