Roasted Eggplant and Tomato Dip(Indian style)

Its a delicious side dish made of fire roasted eggplants and tomatoes. Its infused with aromatic indian spices and herbs.

Ingredients
  

  • 1 Eggplant fresh ones without any seeds will be better.
  • 2 Ripe tomatoes soft ones will be much better.
  • 1 tbsp Finely chopped red onion.
  • 1 tbsp Finely chopped garlic
  • 1 tsp Green chili
  • Salt according to taste.
  • 1 Mustard oil
  • 1 tbsp Finely chopped Cilantro

Method
 

  1. Remove charred skin of eggplant and tomatoes.
  2. Mash them nicely.
  3. Combine everything together.
  4. With the help of masher or hand mix it properly .
  5. It should not have any lumps.
  6. Taste it and adjust the seasoning according to your taste.
  7. Serve it .
