Roasted/Air Fryer Eggplant & Chickpea Salad

Ingredients
  

  • 1 Small Eggplant ,cut into discs
  • ½ Cup Boiled /Canned Chickpeas
  • 1 Small Tomato ,sliced
  • ½ Cup Baby Spinach
  • ½ Cup Baby Kale
  • ¼ Cup Crumbled Feta
  • 1 Tbsp Olive Oil
  • 2 Tbsp Zatar Spice
  • 1 Tsp Paprika/Chili Powder
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Lemon /Lime Juice
  • Salt to taste
For Mint Yoghurt dip
  • ½ Cup Fresh Mint leaves
  • ¼ Cup Cilantro leaves
  • ½ Chili Pepper/Jalapeno
  • 1 Clove Garlic
  • 1 Tbsp Lime Juice
  • 1 Cup Whisked Greek Yoghurt
  • Salt to taste

Method
 

  1. Preheat the air fryer. Coat eggplant slices and chickpeas nicely with zatar spice,paprika , a pinch of salt ,olive oil,minced garlic and lime juice.
  2. Bake them at 360 f for 7-8 minutes or they are nice and crispy .
  3. Make the chutney with help of a grinder or mortar pestle.
  4. Mix chutney with yoghurt and taste it .
  5. If it needs to add salt or something add now.
  6. In a salad bowl mix all the greens tomato grilled eggplant and chickpeas.
  7. Drizzle the yoghurt mint dressing and mix it nicely .
  8. You can top them with your choice of topping( Like sunflower seeds,pumpkin seeds).
  9. Enjoy.
