Rajasthani Makki Ka Dhokla

Ingredients
  

  • 2 Cup Makki Ka Aata(sweet corn flour)
  • ½ Tsp Carrom Seeds
  • ½ Tsp Coriander Seeds
  • ½ Tsp Cumin Seeds
  • 1 Tsp Red Chili Powder
  • 1 Tsp Turmeric Powder
  • 1.5 Tbsp Ginger garlic
  • 1 Tbsp Green Chili
  • Cup Green Garlic
  • 1 Cup Fresh Fenugreek Leaves/Methi Leaves(chopped)
  • ½ Tsp Eno/Baking Soda
  • Cup Yogurt/Indian Curd
  • Tsp Asafoetida
  • 2 Tbsp oil
  • Warm Water(as much required for making dough)

Method
 

  1. Take a big mixing bowl. Add all the ingredients to the bowl except water and yogurt.
  2. Mix everything using your fingers,till the mixture looks nice and crumbly.
  3. Add yogurt at this point and mix it nicely . You can see if you can bind the dough between your palms.
  4. Add warm water ,little by little to form a soft and supple dough.You wont need much water.
  5. Cover the dough with a wet cloth or plate for 10 minutes.Dough needs some resting time.
  6. Make small dough balls of equal size.Flatten them and make a small indent/hole in the center.
  7. Steam water in the Idly maker or you can try bamboo steamer as well.
  8. Arrange Makki ka dhokla in the steamer.
  9. Cover them with a lid and steam them for 20-25 minutes on high steam.
  10. Remove from the steamer .Drizzle some warm ghee on them and serve with dal or kadhi.
  11. Enjoy.
