Method
- Bring a large pot of salted water to boil. Cook orzo pasta according to package instructions.
- Drain and wash the pasta with cold water. Drain again. Mix a few drops of oil into the pasta to prevent sticking.
- Heat olive oil in a pan.
- Add chopped garlic, onion, and mushroom till they caramalise.
- Remove from the pan and keep aside. Saute spinach in the pan till it looks wilted. Add edamame and cook them with spinach.
- In a serving bowl mix cooked orzo, wilted cooked spinach, caramelised onion, garlic mushroom and edamame.
- Add crumbled feta, red pepper flakes, and lemon juice .
- Mix everything together.
- Serve and enjoy.
