Malai Paneer/ Easy Malai Paneer

Ingredients
  

  • 8 Oz Paneer
Spices for roasting and making spice mix
  • 1 Tsp Cumin Seeds
  • 1 Tbsp Coriander Seeds
  • 3 Dry Red Chilies
  • 1 Tsp Black Pepper Corns
Sauteed Vegetable mix
  • 1 Tbsp Butter/Oil
  • Cup Diced Green Bell Peppers
  • Cup Firm red tomatoes,diced ,seeds removed
  • 1 Tbsp Ginger julienne
  • 2 Sliced Green Chilies
  • 1 Tbsp Fresh Cilantro For Garnish
Ingredients for making the curry
  • 2 Tbsp Oil/Butter
  • 12 Cashew (Soak and make paste)
  • ¼ Cup Yoghurt
  • ½ Tsp Turmeric Powder
  • 1 Tsp Kashmiri Red Chili Powder
  • 1 Small Finely Chopped Onion
  • 1 Tsp Ginger Garlic Paste
  • Salt to taste
  • ¼ Cup Heavy Cream/Malai
  • 1 Tbsp Kasoori Methi/ Dried Fenugreek leaves.
  • ¼ Cup Water

Method
 

  1. Roast all the dry spices to make a coarse powder.
  2. Make cashew paste ,mix yogurt and cream to form a smooth paste.Take a pan and saute all the vegetables written under the heading to mix in the last.
  3. Take a pan. Add oil or butter to it and heat it .
  4. Add chopped onion,salt and ginger- garlic paste to it .Saute till the onion looks soft and translucent and the raw smell of ginger garlic is gone.That will take around 2-3 minutes on slow flame.
  5. Add dry spice mix ,kashmiri red chili powder,turmeric powder ,water to the pan and mix.Cook for 1 minute on low flame.
  6. Add cashew paste ,yogurt and cream mix and cook till the oil is released.At this stage mix paneer pieces to the gravy. Stir without breaking the Paneer.
  7. Mix sauteed vegetables and kasoori methi.Give it a nice stir and if it looks too thick add 2 tbsp of water to it.
  8. Cover and cook for another minute or till the oil separates.
  9. Garnish with fresh cilantro and enjoy with roti or rice.
