Malai Gobhi korma

Ingredients
  

  • 2 Cups Medium Cauliflower Florets
  • 2 Tbsp Mustard oil
  • ½ Tsp Cumin seeds
  • 1 Stick Cinnamon
  • 2 Bay leaf
  • 2 Black Cardamom
  • 1 Green Cardamom
for paste
  • 10-12 Cashew Nuts
  • 2 Tbsp Melon seeds
  • 1 GReen chili
  • ¼ Cup Yogurt/Dahi
For Making Curry
  • 1 Tbsp Ghee/Oil
  • 1 Medium Chopped Onion
  • ½ Tsp Crushed Black Pepper
  • 1 Tsp Red Chili Powder
  • 1 Tsp Coriander Powder
  • ½ Tsp Garam Masala powder
  • 1 Tsp Crushed fenugreek leaves
  • 1 Tbsp Ginger Garlic paste
  • 2 Tbsp Heavy Cream/fresh cream
  • ¼ Cup Green Peas
  • ¼ Cups Water

Method
 

  1. Boil the washed and cleaned cauliflower till they are 50 percent cooked.
  2. Wipe with a paper towel and shallow fry in mustard oil till they look golden crisp.
  3. Remove them to a plate.
  4. Grind a smooth paste of cashew ,melon seeds ,green chili and yogurt.
  5. Take a heavy bottom pan or kadhai.
  6. Add ghee/oil.Add all the whole spices and let them crackle.
  7. Add chopped onion and ginger garlic paste and cook till raw smell is gone and onion looks translucent.
  8. Now add all the dry spices and cook them for about 30 second.
  9. Add cashew nut paste and cook on low flame till the oil separates. Add heavy cream or whisked malai to it.
  10. Now add green peas ,fried cauliflower and ¼ cup of water .
  11. MIx everything and cook till the curry /gravy looks rich and shiny.
  12. Scoop it with a piece of naan or roti and enjoy.
