- Take a big pan and add water to it .Let the water come to the boil.
- Add turmeric powder and salt to the water.
- When it starts boiling add maize flour to it.
- Whisk the flour with a baloon whisker to make a smooth tight batter.
- Remove it in a big mixing bowl or plate.
- add ghee /oil to the dough and some to your palm.
- Knead the dough nicely to make a smooth dough .Knead it when it is still warm.
- Make a smooth round ball and cover it with a wet towel.
- Take a griddle or tawa ,heat it on the stove.
- After rolling the dough cook the roti on griddle on both sides.
- Press the roti with a soft cloth which will ensure a puffed roti with a little bit of practice.
- To give it a more authentic char effect cook it on both sides on a direct flame. It should not be more than a few seconds.
- Brush some ghee or place a dollop of butter and serve to enjoy.
