Instant Pot Moong Dal Lauki/Zucchini

An easy and wonderful preparation of yellow lentils/moong dal/with bottle gourds or zucchini. This goes well with any type of Indian flatbread or white rice.

Ingredients
  

  • 1 Cup Moong Dal /Yellow Lentils
  • 3 Cups Water
  • 1 Cup Bottle Gourd /Zucchini(Big cubes.)
  • 1 Medium Chopped Onion
  • 1 Medium Chopped Tomato
  • 2 Green Chillies
  • ½ Tbsp Chopped Ginger
  • ½ Tbsp Chopped Garlic
  • ½ Tbsp Turmeric Powder
  • Salt according to the taste.
  • 1 Tbsp Ghee/Oil (for vegan alternative)
  • 1 Bay leaf
For tempering
  • 1 Tbsp Ghee/Oil
  • 1 Tsp Black mustard seeds
  • 1 Tsp Red Chilli Powder
  • 1 Tbsp Cilantro (For Garnish)

Method
 

  1. Peel the bottle gourd. Cut into big Cubes .If you are using Zucchini peeling is not required.
  2. Wash Moong dal /Lentil with clean water and keep aside.
  3. Chop onion ,tomato ,green chillies ,ginger and garlic.
  4. Plug instant pot and turn the saute button on.
  5. Add one tbsp of ghee/oil to it.
  6. When its hot enough Add bay leaf ,garlic .and onion to it .Saute for 1-2 minute till it looks light brown. Add green chillies ,tomato and ginger to it .Saute for 1 more minute.
  7. Add drained and washed moong lentil to it .Saute it for 2-3 minute or till lentil looks little roasted but not very brown.Add bottle gourd /Zucchini to it.
  8. Add turmeric and salt to it .Add 3 cups of water to it .Stir it .
  9. Put on the lid back .Seal the valve and cook on high pressure for 2 minutes.(Do not increase the cooking time otherwise it will be mushy.
  10. After the steam releases naturally remove the lid. Texture of this dal is thick but if its quite thick for you add ½ cup of hot water to it .Mix it very carefully.
  11. Your dal is ready .Taste it. If you need to add some salt do it now.
How to do the tempering.
  1. Take a small tempering pan. Add one tbsp of ghee/oil to it.
  2. When its hot enough add mustard seeds to it .Let it crackle then add red chilli powder to it.
  3. Pour this over the prepared dal .
  4. Serve your lentil with white rice or just like that.
  5. Enjoy.
