Hara Bhara Kebab

Ingredients
  

For Vegetable Puree
  • 1 Cup Spinach(Blanched)
  • ½ Cup Green Peas(Boiled)
  • 4 Cloves Garlic
  • 1 Inch Ginger Piece
  • ½ Cup Fresh Cilantro
Other Ingredients for making patty/Kebab
  • 2 Medium Boiled Potatoes,grated.
  • 1 Cup Grated Paneer/Grated Tofu(Optional)
  • ½ Cup Chickpea Flour
  • 2 long Green Chili,chopped
  • 1 Tsp Dry Mango Powder
  • Salt to taste
  • Tsp Crushed Black Pepper
  • 10 Cashew for making the patty.
  • Oil for shallow frying the patty.

Method
 

How to make the green puree
  1. Blanch the spinach. Boil green peas till they feel a little soft won't take more then one minute for frozen peas.
  2. Make a smooth pure of blanched spinach ,green peas ,cilantro ,ginger and garlic.You can use green chili peppers in making puree if you do not like them to chew upon. I wanted the chili bite so I used chopped green chilies.Do not use water to make the puree.You will be able to do that without using water.
How to make Patty / Kebab
  1. Boil and peel the potatoes.Grate them for a smooth finish or mash them with a fork or masher .
  2. Add grated/crumbled paneer,chickpea flour,salt ,pepper and dry mango powder.
  3. Mix green puree with the potato mixture and make sure they are totally in corporated.
  4. P.S- you can always on tbsp of chickpea flour on top of everything if you are having difficulty while making kebabs.
  5. Taste the seasoning and if you need more add at this point in time. Make small round flat but thick kebabs and place them on a plate. Insert one cashew on each of the kebab.
  6. Take a pan and heat it with the oil.
  7. Place kebabs in the pan and cook them from both sides till they are crispy and golden for your liking.
  8. Serve them with a dip of your choice and enjoy.
