Garlic Mushroom Fired Rice

Ingredients
  

  • 2 Cups A Day Old Rice
  • 1 Tbsp Oil
  • 5 Cloves Minced Garlic
  • ½ Tsp Chopped Ginger
  • 1 Small Fresh chili(Optional)
  • 8 OZ Mushroom,sliced
  • ¼ Cup Red Pepper
  • ¼ Cup Orange/Yellow Pepper
  • ¼ Cup Scallion
  • ¼ Tsp Crushed Black pepper
  • Salt very little (upto taste)
Sauce Mix
  • 1 Tsp Dark Soy Sauce
  • 1 Tsp Light Soy Sauce
  • ¼ Tsp Red chili flakes
  • 1 Tsp Seasame oil
  • Pinch of MSG /Aromat Powder(optional)
  • ¼ Chili oil
  • 1 Tsp Rice Wine Vinegar ( Skip if you dont like)

Method
 

  1. Heat oil in a big pan or wok and add minced garlic and chopped ginger.Fry on high heat till they look golden in color and a lovely aroma is coming.
  2. Add mushroom ,salt ,black pepper and stir fry for 1 minute or till mushroom is golden brown and caralized from both sides and has reduced a little in the quantity .That wont take more then 1 minute.
  3. Add scallion,fresh chilies ,and both peppers. Saute once to mix everything.
  4. Add the sauce mix and rice to the wok.Mix nicely without breaking the grains.
  5. Give it a taste and garnish with scallion.Enjoy!!
