Ingredients
  

For making Phulki
  • 1 Cup besan/gram flour/chickpea flour
  • 1 Tsp Turmeric Powder
  • 1 Tsp Red Chili Powder
  • Black Salt,to taste
  • ¼ Tsp Asafoetida Powder
  • ¼ Cup Fresh chopped Cilantro
  • ½ Tsp Baking Soda /Eno
  • ½ Cumin Seeds
  • Oil for deep frying
For making the spicy ,tangy yogurt.
  • 1+2 Cups Curd/Yogurt+ Water(Whisked)
  • Black Salt ,to taste
  • 1 Tsp Roasted Cumin Seeds Powder
For chili garlic paste
  • 4 Cloves Garlic
  • 4 Dry Chilies Soaked in hot water
Fresh chopped cilantro for garnish
For second tempering
  • 1 Tbsp oil
  • ½ Tsp Cumin seeds
  • 1 Pinch Asafoetida Powder
  • 1 Tsp Red Chili Powder

Method
 

Making of phulki
  1. Whisk gramflour,asafoetida,turmeric powder,red chili powder,eno/baking soda,black salt . Mix cilantro to it.
  2. Mix little water to make thick but flowy pancake like batter.
  3. Deep fry small pakora /pakori till they look golden.
  4. Keep them on a paper towel lined plate.
Preparing yogurt for dipping Phulki.
  1. Whisk yogurt and water .If that feels thick feel free to add one cup of extra water.
  2. Add roasted cumin powder,red chili paste ,salt and mix properly.Add phulki to this yogurt mixture.Dip them nicely.
  3. For second tempering heat oil in a small pan.
  4. When its hot add cumin seeds,asafoetida ,red chili powder. Pour it over the the phulki dipped in dahi.
  5. Garnish with some fresh cilantro and enjoy.
