Making of phulki
- Whisk gramflour,asafoetida,turmeric powder,red chili powder,eno/baking soda,black salt . Mix cilantro to it.
- Mix little water to make thick but flowy pancake like batter.
- Deep fry small pakora /pakori till they look golden.
- Keep them on a paper towel lined plate.
Preparing yogurt for dipping Phulki.
- Whisk yogurt and water .If that feels thick feel free to add one cup of extra water.
- Add roasted cumin powder,red chili paste ,salt and mix properly.Add phulki to this yogurt mixture.Dip them nicely.
- For second tempering heat oil in a small pan.
- When its hot add cumin seeds,asafoetida ,red chili powder. Pour it over the the phulki dipped in dahi.
- Garnish with some fresh cilantro and enjoy.
