Cucumber Kimchi

Ingredients
  

  • 4 Small Cucumber(Persian Cucumbers)
  • 1 Medium Carrot
  • 1 Cup Scallion
  • 1 Tbsp Sesame Oil
  • 1 Tsp Rice Wine Vinegar
  • 1.5 Tbsp Gochugaru
  • Salt,according to taste
  • ½ Tsp Minced Garlic
  • 1 Tbsp Sesame seeds for garnish.

Method
 

  1. Peel ,carrot and cucumber seperately ,wash and dry them.
  2. Slice them lengthwise into sticks.
  3. Place carrot sticks,cucumber sticks and scallion sticks in a glass or ceramic bowl.
  4. Mix sesame oil ,rice wine vinegar ,gochugaru,minced garlic and salt .
  5. Pour all the dressing over the carrot ,cucumber and scallion sticks.
  6. Make sure you do it using your hands ,so that everything is coated with the dressing. Garnish with toasted sesame seeds.
  7. Cucumber Kimchi is ready to enjoy.
